Chardonnay is the only grape variety used for all the great white Burgundy appellations. It comes from the village of Chardonnay in the Saône & Loire department, around fifteen kilometres south of Tournus.
Located in the village of Gilly-lès-Cîteaux and adjoining the village of Chambolle-Musigny, Les Bons Bâtons are from a fully clay and limestone soils. Growing up on a fairly deep brown soil typical of the appellation, grapes of this parcel express the essential qualities of a white Burgundy.
This wine accompanies perfectly a chicken liver terrine.
